Loma Linda Sloppy Joe Spaghetti Bake

This easy twice baked spaghetti bake is one of the simplest ways of getting a delicious and nutritious meal on the table. This recipe replaces Angel hair pasta with squash spaghetti and a generous helping of Loma Linda’s Sloppy Joe! Gluten free, healthy and vegan.

1 can Loma Linda Sloppy Joe
1 medium Spaghetti Squash (2-3 pounds
Salt to taste
Pepper to taste
1/2 cup Vegan cheese of your choice (we used Daiya’s vegan cheese)
Coriander, for garnishing

Preheat the oven to 400F.
Cut the squash in half (vertically) and remove the seeds.
Sprinkle a little salt on the squash and place cut side down on a baking dish. Bake for 20-25 minutes or until it is easily pierced with a fork. Remove from the oven and let it cool down for about 10 minutes.
When cool to handle, use a fork to separate the flesh into pasta like strands.
Add salt and pepper in squash. Gently mix.
Spread the sloppy joe on top of the spaghetti and sprinkle vegan cheese.
Bake for another 7-10 minutes or till the cheese melts. Sprinkle coriander on top and serve immediately.
