Wake up with these protein-packed cups mixed with quinoa, veggies, sweet potato and our neat Breakfast Mix.
1 egg or neat egg
1 package of neat Breakfast Mix
1 cup broccoli florets
1/3 cup diced shallots
1 cup grated sweet potato
1 1/2 cup cooked quinoa
1 tbsp olive oil
1/4 cup grated cheddar cheese or favorite vegan cheese
Preheat oven to 350.
Saute together the broccoli florets, diced shallots and grated sweet potato in 1 T. olive oil. Season with salt and pepper.
Prepare the neat Breakfast according to the package.
Mix the sauted vegetables and sauted neat Breakfast mix with the 1 ½ c. cooked quinoa, the additional egg or neat egg and the 1 T. olive oil. Mix thoroughly.
Spoon into greased muffin cups* and press down with oiled fingers or the back of a spoon. Top with cheese and bake at 350 for 20 minutes until lightly golden brown.
Allow to cool in the muffin tin for 10-15 minutes and then gently lift out.
