Neat Breakfast Spanakopita

A classic Greek dish made vegan with our neat egg and neat Breakfast Mix for a healthy and delicious start to your morning.

25 triangles or 1 pie

2 tbsp neat egg
1 package neat Breakfast Mix
2 tbsp olive oil, divided + extra for brushing
1 small yellow onion, diced
2 cloves garlic, minced
10 oz. package frozen chopped spinach
3 tbsp nutritional yeast (adds cheesy flavor)
2 tbsp chopped parsley
salt and pepper to taste

In a small bowl, stir together Neat Egg and 1/4 cup water. Add package of Neat Breakfast and 2 tbs of water and stir everything together.
Heat 1 tbs olive oil in pan at medium heat. Crumble Neat mixture into pan, stirring occasional until Neat becomes crispy (about 10 minutes).
Transfer Neat to bowl and set aside. Turn heat to medium-high and add 1 tbs olive oil to pan. Add onion and garlic and saute until lightly brown (about 7 minutes).
Turn heat down to medium. Add spinach and cook until spinach is heated and excess water evaporates (about 5 minutes). Stir in nutritional yeast, parsley, salt and pepper. Transfer mixture to bowl and set aside.
Triangles or Pie
To prepare triangles or pie, preheat oven to 375°.
If preparing pie, grease a 9″ x 9″ baking dish with olive oil. Cut pastry sheets to 9″ x 9″. Place a pastry sheet on the bottom of the dish. Brush oil over sheet, then add another layer. Repeat until you have 6 layers. Add Neat and spinach mixture and spread evenly over pastry sheets. Top with 6 more pastry sheets, brushing oil between each layer. Bake for 30-40 minutes, until golden brown.
If preparing triangles, grease a baking sheet with olive oil. Slice pastry sheets into strips about 2″ wide.* Place a strip on a cutting board or clean surface. Brush oil over it then layer another strip on top. Brush oil over the second layer. Place a heaping tablespoon of Neat and spinach mixture onto end of strip. Fold one corner of strip over to meet the other, forming a triangle. Fold the opposite end over, repeating through the strip until triangle-shaped pastry is formed. Place on baking sheet. Repeat until all mixture is used. Bake for 20-25 minutes, until triangles are golden brown.

 *Make sure to cover the phyllo dough you aren’t using so it doesn’t dry out as you work.
