Wow your vegan guests and watch them chow down on Neat Burritos with Mango & Avocado Salsa! YUM!
1 package neat Mexican, prepared as crumbles
1 box or pouch of your favorite Spanish rice, prepared
1 can refried beans
Vegan Butter (your choice)
1 package flour tortillas
2 ripe mangoes, diced
2 tomatoes, diced
½ red onion, diced
¼ bunch of cilantro, chopped fine
1 avocado, diced
1 jalepeno pepper, seeded, finely diced (optional, if a kick is desired!)
Juice of 1 lime
Salt & Pepper to taste
Prepare neat into crumbles. Meanwhile, prepare the Spanish rice according to package directions.
Make the Salsa. Combined chopped ingredients into a bowl. Toss to combine and season to taste with salt and pepper.
Assemble the burritos. On top of a flour tortilla, layer refried beans, rice, neat, and top with salsa. Roll the burrito, folding in the sides.
Brown the outside of the burritos, making them crispy and delicious! Heat a non-stick skillet over medium heat. Spread vegan butter on the outside of the rolled burrito. Sear each side until golden brown.
Serve warm, with additional salsa on the side. For an extra fresh zip, squeeze a little lime juice over the top of the burrito just before serving.
