Vegan Neat Fajita Burrito

Power up your vegan burrito with Neat’s Mexican mix and add an extra scoop of black beans to make a protein rich stuffing. The spicy Fajita seasoning adds that extra zing to these burritos that you won’t even miss the cheese!

4 tortillas
lettuce
1/2 cup guacamole
fresh cilantro, chopped
salsa of your choice

1 pack neat Mexican Mix
2 tbsp neat egg
water (as required)
1 can black beans
1 packet Fajita seasoning

1 cup cooked rice
handful of fresh cilantro, chopped
juice of half a lemon
salt to taste

1 large Red bell peppers, thinly sliced
1 large Red onion, thinly sliced
2-3 cloves of garlic, thinly sliced
1 tbsp Oil
salt to taste
pepper to taste

Prepare the Neat crumbles from Mexican mix as per instructions on back of the packet.
To prepare the protein component, heat a skillet and add in boiled black beans, fajita seasoning and water. Bring to boil. Next, add in the Neat crumbles and cook till everything is well combined. Remove from heat and reserve in a bowl.
To prepare the rice component, mix in fresh cilantro and salt to taste with rice.
To prepare Fajita, heat a skillet and add in the oil. Next, roast the onions, bell peppers and garlic. Add in salt and black pepper to taste and mix well. Fajita is ready.
To assemble, Start by placing the lettuce on the warm tortilla and follow by all the other components (proteins, rice, fajita and guacamole). Fold neatly and wrap into a burrito. Enjoy with a side of guacamole and salsa.

Variation – Switch rice with quinoa and add in dairy free cheese/ sour cream of your choice.
